Grape-Nuts Cookies

I saw this recipe yesterday in a magazine. I haven't tried it yet, mostly because I don't eat cereal and didn't have any on hand. But they sound delicious. Definitely full of fiber. You could pair a cookie with some yogurt for breakfast or a healthy snack.

Grape-Nuts Cookies

Ingredients:
  • 1/2 cup softened butter
  • 1/2 cup firmly packed dark brown sugar
  • 1/2 cup granulated sugar
  • 3 tablespoons honey
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups rolled oats
  • 1 cup flour
  • 1 cup Grape-Nuts cereal

Directions:
  • Oven Temperature: 350 degrees F.
  • Baking Time: 10-14 minutes
  • Makes: about 4 1/2 dozen cookies
Preheat oven to 350 degrees F. Line baking sheets with parchment paper or lightly grease.

Mix together dry ingredients; set aside.

Beat together butter and sugars until smooth. Add honey, eggs and vanilla; mix well.

Slowly add dry ingredients to butter/egg mixture. Combine until just mixed.

Drop by rounded tablespoons onto prepared baking sheets, 2 inches apart. Bake for 10-14 minutes, until golden brown.

Remove from oven. Let cool for 2-3 minutes on baking sheets, then remove cookies onto cooling rack.
