Chocolate Mint Cookies

This recipe was given to me by a friend years ago after I was drooling over the chocolate mint Girl Scout cookies that come out each year. This cookie is just as good, and you can have it anytime!

Chocolate Mint Cookies

Ingredients:
  • 3/4 cup butter
  • 1 1/2 cup packed brown sugar
  • 2 tablespoons water
  • 2 cups semi-sweet chocolate chips
  • 2 large eggs
  • 2 1/2 cups unbleached all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/2 teaspon salt
  • 2 small boxes Andes Mints

Directions:
  • Oven Temperature: 350 degrees
  • Baking Time: 12 minutes

Preheat oven to 350 degrees. Melt the butter, sugar and water in a medium sized saucepan on low heat until completely melted; stir constantly. Add the chocolate chips, stirring again constantly until melted. Pour into a bowl and let stand about 10 minutes (mixture needs to cool a little).

Beat in the eggs and add dry ingredients, mixing until blended. Chill the dough for about 1 hour.

Line a cookie sheet with parchment paper. Roll one heaping tablespoon of dough into a ball and place on the cookie sheet. Repeat until the dough is all used. Bake for 12 minutes at 350 degrees. Don't overbake.

Immediately put one Andes Mint on top and let melt for 2 minutes. Spread the melted chocolate mint over cookie and let cool.

Note: If Andes Mints are not available, you can usually find Andes mint chips in the grocery isle where the chocolate chips are.
