Turtle Candies are a mixture of toasted pecans, soft caramel and chocolate laid out to resemble a whimsical turtle shape. This cookie version adds a crust, and remains one of my favorite cookies.
Butter Pecan Turtle Cookies
Ingredients:
- 2 cups flour
- 1 cup firmly packed brown sugar
- 1/2 cup softened butter
- 1 cup pecan halves
Caramel Layer:
- 2/3 cup butter
- 1/2 cup firmly packed brown sugar
Topping:
- 1 cup milk chocolate chips
Directions:
- oven temperature: 350 degrees
- baking time: 18 - 22 minutes
- makes 3-4 dozen
Directions for the Crust: Mix together the flour, sugar and butter until crumbly. Place in an ungreased 9"x13" pan; pat firmly down. Sprinkle the pecan halves over the crust. Set aside.
Directions for the Caramel Layer: Place the butter and brown sugar in a saucepan. Stirring constantly, bring to a boil and then continue boiling for 30 seconds. Remove from the heat and pour over the crust layer.
Remaining Directions: Bake the crust and caramel at 350 degrees for 18-22 minutes. The caramel should be bubbly and the crust should be a light golden brown.
Immediately after removing from the oven, sprinkle with chocolate chips. Allow the chips to melt slightly, 2-3 minutes. Swirl the chips for a marbled effect. Do not spread.
Cool and cut into square cookies, making about 3-4 dozen.
