The Forgotten Cookies

Traditionally, my mom always made these cookies on the same day as we made Cream Cheese Cookies. I always thought she was so traditional, but when I got older I realized that it was based on practical application. The simple reason she did it that way was because we always had leftover egg whites to use up from the Cream Cheese Cookie recipe! Crackly and not overly sweet, the chocolate chips and nuts always made my mouth water for more. So easy to do with the kids ...

... and since you're only using the egg whites in this recipes, be sure to set aside the egg yolks for Poppy Seed Jam Cookies,  or Danish Butter Cookies, or for the Cream Cheese Cookies listed above.

The Forgotten Cookies

Description:
  • 2 eggs whites
  • 2/3 cup sugar
  • 1 package chocolate chips
  • 1 cup nuts

Instructions:
  • Oven Temperature: 350 degrees
Preheat the oven to 350 degrees. Line cookies sheets with parchment paper.

Beat egg whites until stiff. Add sugar and beat. Stir in chocolate chips and nuts. Drop cookies on prepared cookie sheets.

When the oven comes up to the proper temperature, turn off the oven. Place filled cookie sheets in the oven. Let the cookies set for awhile until dry.
