Just a little humor folks, I've known a drummer or two, and a bass player (or two). I don't know if either one is redeemable ... lol's. After two years now (who's counting) of fighting cancer and all it's treatments, I am finally getting some of my old energy back. Now, if summer would just get over so I feel like baking some cookies!!!

Back in the Kitchen Again!

Sorry folks. Have been recovering from cancer and all its treatments. But, after the 6 month WELL check, I am ready to get busy in the kitchen again! I'll be posting new recipes just in time for all the holidays coming up and I hope you enjoy them!

PB & J Whoopie Pies

It reminds me of school days. All I need is a carton of chocolate milk and some clouds so I can lay down and find shapes in them. A great treat for those after-school hours! Or, if you're a big kid, a great after work treat!

Peanut Butter and Chocolate Whoopie Pies

A whole wheat whoopie pie? Yes, teamed with peanut butter and chocolate. Who can go wrong with a mixture like that?   

Berry Cream Whoopie Pies

Light, juicy and bursting with flavor ... These vanilla whoopies use an unusual baking method with cream of tarter in the batter so they don't overcook, even if you forget! 

Need to reduce eggs in your diet? You can use 1/2 cup egg substitute in place of the 2 large eggs.

Flip-Flop Whoopie Pies

No, not "flip-flops" like you wear in the summer ... although right now with all the snow and cold I'd rather be in Hawaii wearing flip-flops ... The classic whoopie pie recipe, reversed. Vanilla cake with a rich chocolate filling.

Basic Whole Grain Cookies

There are a couple of ways you can make this recipe. You can make a healthier chocolate-chip cookie out of this dough, or you can use healthy alternatives like nuts and dried fruit (cranberries and pecans anyone?!) for a healthy whole wheat cookie. My favorite is cinnamon chips and pecans. If you opt for no chips, omit the orange juice.

You can use the traditional rolled oats (old-fashioned) rather than quick oats, just give them a quick whirl in the food processor. They give a smoother-looking cookie. If you want an even smoother looking cookie, whirl the quick rolled oats until finely ground in the food processor also.
