It reminds me of school days. All I need is a carton of chocolate milk and some clouds so I can lay down and find shapes in them. A great treat for those after-school hours! Or, if you're a big kid, a great after work treat!

Peanut Butter and Chocolate Whoopie Pies

Basic Whole Grain Cookies

There are a couple of ways you can make this recipe. You can make a healthier chocolate-chip cookie out of this dough, or you can use healthy alternatives like nuts and dried fruit (cranberries and pecans anyone?!) for a healthy whole wheat cookie. My favorite is cinnamon chips and pecans. If you opt for no chips, omit the orange juice.

You can use the traditional rolled oats (old-fashioned) rather than quick oats, just give them a quick whirl in the food processor. They give a smoother-looking cookie. If you want an even smoother looking cookie, whirl the quick rolled oats until finely ground in the food processor also.

Packed with good grains, bananas and coconut, this is a great afternoon treat for adults! The coconut milk powder packs a burst of flavor, you can find it at major grocery stores, or at an Asian market.

Since bananas can vary in moisture, it would be best to test-bake two scoops of the batter to make sure it comes out properly. If the pies are too flat, add another 1/4 cup flour to the remaining batter.

Remember the Whoopie Pie? Historians say that Amish women would bake these and put them in the children's lunchbags. When children would find the treats in their lunch, they would shout "Whoopie!" But no matter their origin, they are yummy, fun and satisfying.


The best way to store these pies - wrap individually in plastic wrap and store at room temperature. They usually stay fresh that way for 2-3 days, if they don't get eaten before then!

I saw this recipe yesterday in a magazine. I haven't tried it yet, mostly because I don't eat cereal and didn't have any on hand. But they sound delicious. Definitely full of fiber. You could pair a cookie with some yogurt for breakfast or a healthy snack.

Fudge Brownies

Historically, it was popularized in the United States and Canada during the first half of the twentieth century. A chef in Chicago created the hand-held confection for ladies attending a fair. The earliest published recipe of this type of brownie appeared in 1904. I have to say, over a hundred years old and still going strong ... now that's a good recipe!

 I found this particular recipe years ago in a favorite cooking book of mine, entitled (appropriately),  "Chocolate, Chocolate, Chocolate". This is my favorite brownie recipe. Easy to make. Fudgey and chocolaty.
